You’re a peach

I mentioned earlier that I was trying some individual peach cobblers. They turned out great. And there were SUPER easy. There are only a few ingredients that are needed. This recipe made enough for two small servings (I used 3″ ramekins for each).

Individual Peach Cobbler
1/3 C. Bisquick
1/3 C. Almond Milk
1 snack size Diced Peaches in water (can use fresh or frozen but I’m super lazy)
2 packets Truvia
dash of spices (cinnamon, nutmeg, ginger)

Preheat oven to 350*. Spray ramekins with vegetable oil.

Mix the bisquick, milk, truvia and spices. Spoon about 1/4 c prepared mix into each ramekin. Drain some of the juice from the peaches but leave a little bit. Divided the peaches between the ramekins. Top with the remaining bisquick mixture.

Place on a baking sheet (I used a muffin top pan to keep the ramekins from sliding) and bake for 35-40 minutes.

Remove from oven and allow to cool slightly. Since each of these cobblers come in at only about 108 calories you can splurge with a spoonful of ice cream or whipped cream. YUM!

  1. This things are seriously delicious.

Made some again tonight and they were just as good as before. This time I turned the broiler on for about 2 minutes at the end to brown it up a bit.

    YUM!
